I have not tried freezing it, but there is no reason why this would not be possible (although it is likely to require re-heating/toasting after freezing). These doughy, swirly, gluten free cinnamon buns are soft, sweet and delicious, laced with thick white icing.

Naturelo Nixtamalized Cornmeal (1kg): Here’s the link for the masa harina flour I used to create the 2-ingredient corn tortilla wraps (page 59) in the book. I always use the FREEE by Doves Farm gluten free white bread flour which is a mix of rice, potato and tapioca flour. But in terms of process, try to soak the fruit for several hours for best hydration and preferably 12 to 24 hours. Not had cinnamon rolls in years and these are delicious and your recipe is so thorough and easy to follow ❤️.

Unlike ‘easy-bake’ yeast, you MUST activate it first by putting it into warm water/warm milk with sugar. It's primarily used to make your baked goods rise and add fluff to a piece of bread or a cinnamon roll. Enjoy them while they're still warm and scoop up all that sugary, cinnamon-y goodness at the bottom of the baking tin. Cut the dough into 12 event pieces - I do this by cutting the cylinder in half with a sharp knife, then each half in half again, then finally cut each piece into three.With regard to the milk, I would suggest using your usual DF milk for the yeast activation and then for the rest of the liquid milk, perhaps mix a couple of tablespoons of higher fat DF cream into standard DF milk up to the total weight required.
