About this deal

As I was taught, the Victoria Sponge is usually two buttery sponge cakes that sandwich jam, fruit and cream, or buttercream. It is a strictly rustic affair - cream and jam spilling over the edges, sugar going everywhere. The victoria sponge, strictly speaking, is not really a sponge at all and should be thought of as a pound cake. Sponge cakes, in a traditional sense, refer to cakes that are leavened solely by the expansion of air trapped by whisking eggs. Before baking powder, cakes were either leavened with eggs or yeast - think genoise or kugelhopf. The invention, in 1843 by Alfred Bird, changed the game for cakes.

Alfred Bird's 1843 baking powder was a single-acting baking powder, a combination of bicarbonate of soda and tartaric acid. As soon as these two ingredients are hydrated, they react to create carbon dioxide, and this means the reaction happens only one time.Choosing the right colors for your project is a crucial part of successful design. Spend some time researching colors and how they affect people’s emotions, and choose a palette that best fits your project. You can also use a color wheel to help you create harmonious color combinations – Facile Web Graphic. Use the Rule of Thirds Cakes have around since the time of the ancient Egyptians, and are believed to have been more like sweetened bread with the addition of honey, nuts and dried fruits than like the cake we know today. (It may also may refer to any round, flat disk of food, such as a pancake or even a yeasted sweet (coffee)cake, discussed in other sections.) The precursors of modern-day cakes did not emerge until around the mid 17th century in Europe, with the advent of more sophisticated ovens. As technology advanced, cake baking evolved. More refined and delicate cakes were the result of ovens that more reliably maintained specific and even temperatures. Better mixers and pans, and ingredients such as refined sugar and flour also helped produce a higher quality cake. The dense European Pound Cake consisted of equal weight flour, sugar, butter and eggs, while the light and airy European Sponge Cakerelied on beaten eggs or egg whites for leavening. Cloake, Felicity (16 May 2013). "How to make the perfect Victoria sponge cake". Guardian . Retrieved 6 December 2015. [Victoria sponge] is a misnomer, because a true sponge, of the kind used in Swiss rolls, is made from a whisked mixture of eggs, sugar and flour. Higher hydration/oil = longer shelf life - the cake I made with double cream was really soft, even 5 days after baking

With my success baking up the German Chocolate Jimbo Cake I feel like I want to bake more of these cakes! Not only can you make 6" cakes but with the use of different sized rings you can pretty much make whatever size cake you want (Tosi even gives information on how to make darn delicious vegan cakes!). It's all about eating something that is worth the effort to make in the first place. Nothing beige or boring. Layer cakes like this are perfect for me because it's not about piping on flowers or swooping that frosting. And, if you're like me, in love with Milk Bar but might never have a chance to actually taste their creations, then this book allows you to easily bake up all kinds of lovely Milk Bar cakes right in your own home. This deviated from my expectation. I have struggled to find any resources on this. Still, I wonder if it is to do with the mobile liquid fat keeping the hardening gluten network more elastic and flexible for longer, allowing for more significant rises. A Lancashire Courting Cake is a fruit-filled cake baked by a fiancée for her betrothed. The cake has been described as "somewhere between a firm sponge – with a greater proportion of flour to fat and eggs than a Victoria sponge cake – and a shortbread base and was proof of the bride-to-be's baking skills". Traditionally it is a two-layer cake filled and topped with strawberries or raspberries and whipped cream. [20] My final formulation doesn't deviate significantly from the classic 1:1:1:1, but we do change where the fat and hydration are coming from, to delicious effect, with a final breakdown of 23% fat, 26% hydration, 23% sugarEggs have two parts - the white and the yolk. The white is 90% water, with the rest being made up of proteins that float around doing their thing. The yolk is 50% water - the other 50% is a mixture of fat and protein. In their raw state, egg whites stay watery thanks to the bonds between proteins and water that repel each other. Thanks to the fat, which coats the proteins and helps prevent the repelling behaviour of the protein and water, egg yolks appear a bit more together, even in the raw state. Ask my husband right this moment if he's regretting sharing a birthday cake with me and he'd probably say yeah (our birthdays are less than a week apart, so we've been sharing a cake instead of having two in the past few years). If he knew how much he was going to love the German Chocolate Jimbo Cake I think he would have told me to make two cakes! (My daughter would have also asked for two cakes because as I was unmolding the cake, she was standing behind me and offered this observation: "Hey mom -- I don't think that cake is going to be big enough for the three of us.") All I can say is that everyone is going to be wanting their own cakes from now on! Negative space is just as important as positive space, so make sure to create a balance between the two. Negative space helps to focus the viewer’s attention and adds visual interest to your design. Try to use negative space to create a sense of harmony in your work. Delia describes which flours to use in cakes, the importance of keeping your eggs at room temperature, and the value of an ingredient that is absolutely free! Plain flour Some tips: My cake was too defrosted and it fell apart as I was cutting it. She recommends taking it out of the freezer 3 hours before cutting it. I put in the fridge about 7 hours before and put it room temperature about 3 hours before and that was too defrosted. I also didn't do the warm wet knife for every cut that she recommends. The last time (well, the only time) I made a 6"-layer cake, I used several 6" round cake pans. This is not the case with a Tosi cake -- she relies on a jelly roll sized pan to bake the cake on. Once baked and cooled you use your cake ring to cut out the layers -- two perfect rounds and one "round" that is cobbled together with pieces. As you can see in my picture, I got 2 whole rounds and two 1/2 rounds. The benefit to baking the cake like this is that you get really even layers, unlike the domed rounds you get when you bake a cake layer in a round cake pan. Not having to level anything out is a huge plus! (If you're wondering what you do with the extra cake you cake eat it or make cake truffles with it -- the recipe for which are in the book). The Greeks invented beer as a leavener, frying fritters in olive oil, and cheesecakes using goat's milk. [4] In ancient Rome, the basic bread dough was sometimes enriched with butter, eggs, and honey, which produced a sweet and cake-like baked good. [5] The Latin poet Ovid refers to his and his brother's birthday party and cake in his first book of exile, Tristia. [6] Each cake was scaled at 55g per case and baked at 170c fan for 12-15 minutes depending on if the cake was baked alone (shorter bake time) or if there were many cakes on one tray (longer bake time) The creaming method gave me the fluffiest, lightest sponge. The all-in-one method was tender, too, but had some uneven holes. The reverse-creaming method was also acceptable but had some irregular holes - it was slightly denser, with more chew. The melted butter crumb was fine and even but dense and dry. The cakes all had similar rises, though the all-in-one and creaming had the flattest tops, whilst the reverse creaming and melted butter cakes domed slightly, though pretty.
